Qsine Slider Party

March Madness is upon us, and—starting today—the sports fans among us will watch on as regional “MVPs,” Kentucky, Villanova, Duke and Wisconsin battle it out over the coming weeks in the annual NCAA Division I college basketball tournament.

Hosting a March Madness party? Why not keep your guests nourished and pumped for their favorite teams, with a slider station, like the one featured in Celebrity Cruises’s Qsine restaurant.

INGREDIENTS

Beef Patty
3 ½ pounds lean chuck meat (ground)
½ pound beef fat (ground)
2 white onions (finely chopped)
¼ cup kosher salt
1 tablespoon black pepper (ground)

Slider Sauce
2 cups mayonnaise
1 cup sweet chili sauce
1 ½ teaspoons Tabasco sauce
1 ½ teaspoons tomato paste

Assembly
1 pound yellow Cheddar cheese (sliced)
18 brioche buns (slider size)
As needed butter (softened)
2 yellow onions (julienned and caramelized)
4 plum (Roma) tomatoes (sliced)
1 head iceberg lettuce (sliced)
6 dill pickles (sliced)
2 pounds French friend (premade)

METHOD

In a mixing bowl, combine beef patty ingredients. Make sure the mixture stays cold while mixing (or it will separate). Once completely mixed, form small 2-ounce patties, and place in the refrigerator.

Combine all slider sauce ingredients in a large mixing bowl. Whisk until well incorporated. Place in squeeze bottles.

On a preheated grill, cook meat patties until done to desired temperature; place the sliced Cheddar cheese on each to melt. Cut the buns in half. Brush with butter, and toast the cut sides on a low heated part of the grill. Heat the caramelized onions; place in small cast-iron pan, and add cooked patties on top. Place the grilled buns in basket; place the rest of the ingredients on small serving dishes.

Serves 6.
